Scotland's
is also famous for high quality meat. Breeders allow their herds
to roam freely on green grass of Aberdeenshire's rolling hills,
breathing in the pure sea-salty air. The herds are free range and
their diet is not supplimented with recycled protein, hormones or
additives.
Haggis
Haggis has long been the Scottish National Dish. It is made
by stuffing the larger stomach lining of a sheep with the smaller
("knight's-hood") bag, the pluck (liver and heart), beef
suet, oatmeal, onions, black pepper, salt, and water. The stomach
bag is then sewn shut and boiled. Haggis is traditionally eaten
on Hogmanay (Scottish New Year) and on Burn's Night.
