The world of Scottish beer is improving with small, independent microbreweries appearing in locations as diverse as the centre of Glasgow and the islands. Recently an Edinburgh brewer took the prize for Champion Beer of Britain at the Great British Beer Festival.

Scotland is famous for its full-bodied, malty ales. Scotch ales are sweet and full-bodied, with malt and roasted malt flavours predominating. They are dark copper to brown in color and are not bitter like British ales.

Ingredients

The predominant base malt is Scotch two-row pale ale malt. Darker malts are added. Roasted barley, from 1 to 3%, is also used, which accounts for most of the color and flavor of Scotch ales. Wheat, malt or torrified, is often found in recipes for this beer. Scottish ales usually contain treacle (molasses) or brown sugar.

Brewing Techniques

Scottish ales can be mashed using a step infusion. For best results, a long boil is preferred for caramelization as caramelized wort sugars are the major component of this style. Fermentation temperatures are usually between 10 and 20ºC, and maturation typically lasts for 6 to 12 weeks at temperatures low enough for the flavour to develop.
